Beef Stroganoff ... Little Mama Style

I will be the first to admit that this is not one of my most healthy meals.  It is, however, one that can have healthy substitutes and hidden nutrition!

  • 1 lb ground beef, browned and grease drained (or ground chicken)
  • 1 can cream mushroom soup (or use this recipe to substitute the condensed soup cream soup substitute)
  • 1 cup sour cream (or plain yogurt)
  • 1 to 2 T pureed cauliflower
  • 1 to 2 T milled flaxseed
  • 1 to 2 t Worcestershire sauce (to taste)
  • big handful of fresh spinach (chopped)
  • 1 T fresh, chopped parsley
  • 1 lb egg noodles, cooked according to package
After you brown and drain the meat, mix in sour cream, mushroom soup, cauliflower, flaxseed, and worcestershire sauce.  Simmer on low for approx. 15 minutes while pasta cooks.  When pasta is finished cooking, add the spinach and parsley to the meat mixture.  Stir until well combined, if it seems too thick you can use a tablespoon as a time of the pasta water to thin it out.  Toss with noodles and serve with your favorite sides!  This is one of my super simple, "go-to" comfort foods.  Hope you enjoy!
